Broken Symmetry had their work cut out for them transforming a historic train depot into a 5BBL gastro brewery. Located in downtown Bethel, CT, Broken Symmetry Co-Founder and Head Brewer Christopher Sanzeni knew the building was an ideal site for the town’s newest brewpub, but fitting a 5BBL brew house, cellar system, kitchen, bar area, and taproom into the 1,800 square-foot space required some creative thinking.
“For the space requirements, I definitely had to go electric. That’s one of the things that really helped us fit everything in here to better suit the space.”
The System
Brewmation worked closely with Chris on the design, engineering, and installation of their turnkey brewery, which includes:
- 5 BBL electric brew house
- Six fermenters and a brite tank
- Brewmation Advanced brew house and cellar controls
- Glycol chiller and all pumps and plumbing needed for setup
- Malt mill and the Gladiator keg washer
A complete turnkey system, providing everything needed to keep their taps full with IPAs, pilsners, stouts, Belgians, sours, and just about everything in between.
Going from an aeronautical engineer and weekend homebrewer to running a brewery was a big change. When asked about making this transition, Chris says:

Expanding with Canning
With the success of their rotating tap list and San Diego-style food menu, Broken Symmetry has expanded their brewery equipment to include a new Twin Monkeys Mancos canning line to support a wider distribution into neighboring states. A must-visit brewery when beercationing in New England!
